Subsititions for dairy products in baked goods -- will not work for whipping

The following are equal to one cup:

Heavy Cream

  • 2/3 cup dairy alternative (i.e. soy milk or prepared Dari-Free)
  • 1/3 cup melted margarine or canola oil

Light Cream

  • 3/4 cup dairy alternative (i.e. soy milk or prepared Dari-Free)
  • 1/4 cup melted margarine or canola oil

Buttermilk

  1. 1 tablespoon apple cider vinegar or lemon juice
  2. enough dairy alternative to equal one cup
  3. allow to stand for 4-6 minutes before adding to any recipe

Evaporated Milk

  • 1 cup light cream alternative or dairy free coffee creamer

Sweetened Condensed Milk

Ingredients

  • 1/2 cup powdered dairy alternative (i.e. Dari-Free)
  • 3/4 cup sugar
  • 2 tablespoon margarine
  • 1/2 teaspoon xanthan or guar gum

Directions

  1. Combine all ingredients, mix well.
  2. Bring to slow boil over medium heat, stirring constantly.
  3. Boil for one minute, or until thick and bubbly, stirring constantly.
  4. Chill until cool before adding to recipe.

Butter

  • 1 cup margarine or vegatable shortening
  • 1 1/2 tablespoons water
