Oopsy Muffins

I was in a hurry and accidentally added the wrong ingredient to some muffins that I was making this morning before school for the boys. I intended in making gfrice free muffins on page 126 of Special Diets for Special Kids with my own substitutions of course...

Ingredients
  • 3 eggs (i use egg replacer or egg whites..dehydrated)
  • 1 mashed banana
  • 1/3 c Beech Nut baby rice cereal
  • 1/4 c oil
  • 1 to 1 1/2 cups of water (possibly a little less or more)
  • 1/3 c bean flour (we use chickpea)
  • 1/2 c tapioca starch
  • 1/2 c potato starch
  • 1 3/4 c rice flour
  • 1 tsp xanthum gum
  • 2/3 c sugar
  • 3 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 c flax seed
Directions
  1. combine dry ingredients and set aside
  2. beat all liquid ingredients and add to dry ingredients
  3. bake at 375° for 20-30 minutes
  4. check with a clean knife or tooth pick
