Oopsy Muffins
I was in a hurry and accidentally added the wrong ingredient to some muffins that I was making this morning before school for the boys. I intended in making gfrice free muffins on page 126 of Special Diets for Special Kids with my own substitutions of course...
Ingredients
- 3 eggs (i use egg replacer or egg whites..dehydrated)
- 1 mashed banana
- 1/3 c Beech Nut baby rice cereal
- 1/4 c oil
- 1 to 1 1/2 cups of water (possibly a little less or more)
- 1/3 c bean flour (we use chickpea)
- 1/2 c tapioca starch
- 1/2 c potato starch
- 1 3/4 c rice flour
- 1 tsp xanthum gum
- 2/3 c sugar
- 3 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 c flax seed
Directions
- combine dry ingredients and set aside
- beat all liquid ingredients and add to dry ingredients
- bake at 375° for 20-30 minutes
- check with a clean knife or tooth pick
