Basic Rice Flour Waffles
Ingredients
- 1 cup of rice flour
- 1 teaspoon of Featherweight Baking Powder
- 1 whole egg
- 1 tablespoon oil
- 1/2 cup liquid
- 1-tablespoon powdered milk substitute, calcium or protein powder
- 1-tablespoon vinegar or lemon juice
Directions
- Heat waffle iron
- Mix ingredients well
- Cook until golden brown
Great crispy, and good plain. Make small batches to keep the baking powder active.
Makes 4 great waffles.
Variations:
- Flour Variations: bean or grain varieties
- Add ¼ cup chopped fresh or dried fruit
- Substitute fruit/vegetable juices for liquid
- Add nuts, chocolate chips, or carob milk powder
- Add herbs: savory or sweet combinations
- Add different sweeteners for dessert type waffles
- Add ¼ cup cooked, mashed vegetables - plus liquid to correct consistency
Toppings:
- Traditional Maple Syrup (Vermont pure doesn't use milk-Canadian pure does!)
- Jellies, Jams, and Nut Butters
- Fruit/Veggie Mashes/Purees
- Powdered Sugar

thinking too clearly in the AM. Feel free to expand on the joys of GFCF foods. These are lighter and better than gluten-waffles. I used
orange juice for the liquid this morning and the acid reacted with the baking powder for some of the lightest waffles I've ever eaten!"
