Non Tomato Sauce

Tomato is part of the deadly nightshade family.

Here is my really tasty non-tomato sauce recipe:

Ingredients
  • 2 carrots
  • 1 courgette (known as zucchini in the US)
  • 2 cloves garlic (whole)
  • 1 small onion
  • 4 red peppers
  • 1 tbsp olive oil
  • 1 tsp mixed herbs
Directions
  1. Peel the carrots and chop into batons along with the courgette.
  2. Chop the onion and peppers into quarters.
  3. Coat the whole vegetable mixture with olive oil and herbs and roast in the oven until the skin on the peppers starts to blacken.
  4. Remove from oven and peel the skins from the peppers.
  5. Put the roasted vegetables in a food processor and liquidise to a smooth consistency by adding water until you get the desired thickness.

Serve hot over gluten free pasta or meatballs.
