Banana Pecan Quickbread

Ingredients

  • 1/2 c. margarine
  • 3/4 c. sugar
  • 2 eggs
  • 3 overripe bananas
  • 1 t. vanilla or 1/2 t. coconut flavoring
  • 2 c. All Purpose GF Flour Mix (click for flour recipe page)
  • 1 T. baking powder
  • 1 c. pecans, finely ground

Directions

  1. Cream margarine with sugar
  2. Beat in eggs, bananas & flavoring
  3. Blend in remaining dry ingredients and pecans for 1 min.
  4. Pour batter into greased 5 x 9" loaf pan
  5. Bake at 350 deg. for 1 hr.
  6. Do not underbake
