Tapioca Dessert

 

Ingredients
  • 1 lb. tapioca
  • 1 1/2 - 2C. sugar
  • 16 oz. of coconut milk
  • 1 Tbsp. Frontier vanilla
  • 1/4 tsp. salt
Directions
  1. Cook tapioca according to directions.
  2. Chill.
  3. In a seperate saucepan,combine sugar and coconut milk.
  4. Heat until sugar dissolves, add vanilla and salt.
  5. Immediately before serving, combine tapioca with syrup mixture.

This makes 16 servings. I make this big batch because my family (4) ALWAYS has seconds and the kids gobble it up the next day.
