Golden Fried Potatoes

Mary is the author of healthygfcf.homestead.com which has a healthy GFCF video available on it and includes a reference guide she prepared.

Ingredients
  • potatoes
  • oil
  • salt
  • garlic powder
Directions
  1. Peel and cube some potatoes.
  2. Place the cubed potatoes in a non-aluminum pan, cover with an inch of water.
  3. Bring to a boil and then turn off the burner and let sit for 5 to 10 minutes, until they are nearly cooked through.
  4. Drain and cool (otherwise they will crumble during the next step).
  5. Place potato cubes in a frying pan with a little olive oil (or oil of choice) and fry on low heat until crispy.
  6. Since they are already cooked, this step shouldn't take more than 5-10 minutes.
  7. Sprinkle some garlic powder onto the cubes and continue lightly frying them until they are golden brown.
  8. Salt to taste and serve.

Yum! If you sprinkle a little pure garlic powder onto fried potatoes, then finish toasting them, they will look golden without having been fried to death in too-hot oil.
