Hawaiian Rice
This is an easy, baked rice side dish. May bake with oven-fried chicken, just adjust time to correspond to cooking temperature of the chicken.
Ingredients
- 1 1/4 cup uncooked brown rice
- 1/2 cup drained crushed pineapple-reserve juice
- 1/2 cup raisins
- 1/2 large apple/pear-peeled and cubed
- 1 small onion-chopped
- 1 8 oz can sliced water chestnuts
- 1 rib celery-chopped
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon tumeric
- 1 Tablespoon apple juice concentrate
- 2 tablespoons soy sauce
- Juice of drained pineapple + water to = 2 1/2 cups liquid
Directions
- Mix all ingredients in 1 1/2 quart casserole dish.
- Stir with a fork.
- Bake covered in 300 degree oven for 55 minutes.
- Let sit, covered for 15-20 minutes.
- Fluff with fork and serve.
- Freezes well.
This recipe doesn't work for the Feingold group, but you can delete and
add fruits as acceptable to your family's needs.
