Roast Potatoes

 

Ingredients
  • 5 lbs of potatoes cut into wedges
  • olive oil
  • lemon juice
  • salt
  • pepper
Directions
  1. Boil the potatoes slightly in this mixture plus some water enough to soften but not cook through.
  2. Put them into rectangular glass pans and roast them in the oven at 350° for about 30-45 minutes, with plenty of the seasoning mixture.

If you have the time, I suspect that soaking the potato wedges in a mixture of the other ingredients would have improved the quality.
